Freeze drying is a revolutionary and the most gentle method of drying fruit. It allows the fruit to retain its original appearance, natural full flavour and aroma. Approximately 6-7 kg of fresh fruit are used per 1 kg of freeze-dried fruit. 

Apricots originally come from Armenia, hence their Latin name Prunus armeniaca.

Freeze-dried apricots are light, fragrant and crisp. They soften when in contact with water and return almost to their original state. You can enjoy their sweet taste all year round.

Dried apricots have a wide range of uses:

• they are suitable for muesli, breakfast cereals and yoghurt
• on their own or in combination with other freeze-dried fruits, they serve as a quick and nutritious snack
• thanks to their nature, they can also be used in RAW recipes

Do you know how freeze-drying works?

In the drying chamber, the fresh fruit is deep frozen down to -100 °C. Then comes the first drying phase. The temperature is raised back to zero and, thanks to a vacuum of 50 to 100 Pa, the water contained in the fruit is gradually evaporated and collected in the condensing chamber. The last part of the freeze-drying process removes the remaining moisture and gives the fruit its crisp consistency.
