The coconut palm is called the "tree of life" because of its versatile use. After the coconuts are hand-harvested and hand-shelled, the flesh is carefully cut into coconut slices, which are immediately dried at 50 °C. This is the ideal temperature to ensure that the coconut chips are properly dried and not roasted. The whole process takes about 12 hours and the coconut cools for a further 2 hours so that it can be packaged and transported by air to Europe. The time between harvest and when the product shows up in our warehouse is approximately 2 weeks. In this way, the maximum freshness of the packaged ingredients is maintained.
