Tiger nut flour is an untraditional gluten-free alternative to conventional flours. In addition to celiac patients, it can also be enjoyed by people suffering from an allergy to nuts. Tiger nuts are not nuts in the true sense of the word, but the tubers of the tiger nut plant. The plant produces oily 1-2 cm tubers underground, which have a pleasantly sweet nutty taste. At first glance, the tubers resemble a larger, shriveled nut, hence the name tiger nuts or ground almonds.
