Do you know how freeze-drying works?

In a drying chamber, the fresh fruit is deep-frozen to -100 °C. Then comes the first stage of drying. The temperature is raised back to zero and, thanks to a vacuum of 50 to 100 Pa, the water contained in the fruit is gradually evaporated and collected in the condensing chamber. The last part of the freeze-drying process removes the remaining moisture and gives the fruit its crisp consistency.
