Ghee, or pure butterfat made by separating butter protein from animal fat, is traditionally used in hot and cold cuisine around the world. Processed butter has an excellent flavour, an easily spreadable and absorbable consistency, and a pleasant aroma. Compared to the original butter from which the ghee was churned, it has a higher smoke point (approximately 200°C) and does not need to be stored in the refrigerator, and has a longer shelf life.

Use

Ghee can be used in both hot and cold kitchens. It has an indispensable place in traditional Indian cuisine, which recommends it for the preparation of boiled, baked and fried dishes.
