Almonds are the kernels of the fruit of the almond tree, which is closely related to the peach and apricot. They are a nutshell fruit, like hazelnuts or walnuts. The largest producers of almonds in the world are the United States (especially California), Australia and Europe.

Peeled almonds do not contain bitter skin and are therefore more easily digestible.

Almonds have also found use in the cosmetics industry. Almond oil is extracted from them and added to skin and body creams.

Use

Almonds are traditionally used in baking sweet pastries, Christmas cookies or macaroons. Nowadays, they have found use in a variety of paleo recipes. Due to their characteristically sweet aroma and taste, they are widely used in the preparation of RAW desserts.
